Grapes are hand-picked at the optimum of their maturity in the second decade of September. After soft destemming, without crushing grapes are transferred to Qvevri (traditional ancient technology) for fermentation. Qvevri buried in the ground or kept in cellars. The clay provides natural temperature control and a little oxygen exposure, all of which makes for some truly dynamic wine, unlike anything you may have tasted. There's also skin contact, which gives white wines that iconic amber color and more tannins than conventionally made whites, where the skin is removed before fermentation. Qvevri wine-making isn't the type of thing that can be mass-produced, which makes each wine in this style unique. The latter lasts for about 3 weeks, followed by the malolactic fermentation. Later the Qvevris are refilled, sealed, and left for 3-month long skin maceration. In late December- early January clarified wine is transferred to the tanks for few months and after bottling.
Light amber wine with orange hints. Nose is intense, with aromas of white fruits and fine herbaceous flavors. Mouth is complex and mineral, finishing on herby aromas. Long finish with silky tannins.
Perfectly pairs with light meat like turkey, quail, and pork, an array of seafood and Greek and French salads.
